How many servers for hosting?

I am starting a Windows web host business and am still planning how to set up the server/servers. I think SQL needs to be on it's own physical server. That leaves me with DNS, email client, I might also use Exchange, file server, Plesk control panel/billing/web presence, MySql and PHP.
How many virtual servers do I need and how many physical servers do I need? Which processes can be on the same server?

Unfortunately, Plesk does not support separate Mailserver and DNS server though you can still have a separate database server. My choice would be Hosting Controller which is quite stable and supports separate servers for other services. Ideally, you can use one server for IIS, one for SQL, one for Mail server. DNS server can squeeze into any of these. You can integrate WHMCS with Hosting Controller. HC also supports Exchange server, so it should be ideal for you.

You will require two dedicated servers. You can use one dedicated server to create multiple VPS, if you purchase Data Center license of Windows Server 2008. You can use second dedicated server for MS SQL database.
It is ok if you use VPS for IIS, Email Server and for WHMCS. You can keep primary nameserver on your database server and secondary nameserver on email server.
