HowTo - Bouncing of dedicated?

I'm on CentOS 4.4, webmin, LAMP, OpenSSH and ProFTPD server.
But what I'm wondering is how to look at my off network backup space.
I can only access my backup space through the DC network/my own server. So I need some kind of way to bounce a GUI ftp connection off the server - which would allow me to look at the files...
Any suggestions?
I know I can use rsync for backing up and restoring. But the way I understand rsync I need to know exactly what I am to move, as it operates on an exact command.

Okay - I managed to rsync a site structure to my off network backup space.
But if I only want to restore a single library and the files within - how could I find it again... I'm thinking if (or when) there are technical or security issues I will have forgotten the names of the MySQL databases and static files and libraries - and under those circumstances I wont be able to look through my drive to find the names - So I'm afraid I'd just get stuck with a useless backup unless I backup EVERYTHING. I do have space for everything - but wont have for long.

No worries, libraries can always be redownloaded. You are after all using a popular distro, aren't you?
