Project update process question

When you are working on your projects that are always being updated and revised, what do you use to keep track of all of these changes? Take for instance a project I am working on right now. It is a large employee management portal for a local company which keeps track of every employee, what laptop they have, cell phone, .... and so much more. It may be several weeks before I upgrade the live site with the code from the development server. Plus there are usually database changes to keep track of as well. What do you use when faced with project updates?

You need SVN

Doesn't SVN only run on Linux servers? I forgot to mention in the original post that both the production site and dev site are being served via IIS6 2k3 win servers.

There is only a client for Windows. There is another one that is for Windows can recall now it has Track in it's name.
