what problems could i be facing if i skip that, i'd guess one cannot access file system via some grub parameters,

Grub passwords provides extra security. It is possible that someone reboots your system in a single user mode and resets root password.(If there is no physical security.) You can prevent such issues by setting grub passwords. I won't affect the performance of your system.

This is only useful if you have physical access to the machine.
I use it on my PC at home, but I don't care for dedicated servers, since noone is supposed to get access to them, and anyway they could just boot off a CD and get rid of my password if they had access to the machine.
Also, please don't make the mistake of password-protecting a kernel to boot. You won't like that when you reboot if you don't have a KVM over IP or some way to type on the remote keyboard
